Super simple alternative to Buffalo Wings – these are loaded with taco flavor!
~~~ TACO CHICKEN WINGS ~~~
1 C ranch salad dressing (homemade or purchased)
1 (4.5-oz) can chopped green chiles
1/2 C flour (use rice flour for gluten free)
1 (1-oz) pkg taco seasoning mix (or 2 T homemade mix)
2 tsp canola oil
24 chicken drummettes or chicken wings (about 2 lb)
Dried parsley flakes
Heat oven to 350*F. Line a large rimmed baking sheet with parchment
paper. Combine salad dressing and chiles in blender; cover and blend
until smooth. Spoon into small serving bowl. Refrigerate while making
drummettes. In shallow dish, combine flour and taco seasoning mix; mix
well. Stir in oil with fork until well blended. Coat drummettes with
flour mixture. Coat drummettes again to use up flour mixture. Place on
prepared baking sheet. Bake for 15 minutes. Turn drummettes; bake an
additional 14 to 17 minutes or until chicken is fork-tender and juices
run clear. (temperature should be 165* or higher) Sprinkle parsley
flakes on salad dressing mixture; serve as dip with warm drummettes.
